Homemade Chicken Nuggets with Sweet Potato Fries

My husband usually cuts the potatoes for me because my hands don’t work well enough to cut through anything tough.10153944_10203425429497853_805571619_n We have really sharp knives too. Just cut them and bake them. I spray them with a little Pam spray. They are not as crisp as if you fry them, but they are still good. I used melba toast that I blended in the magic bullet as my flour. It counts as a carb for me- and this makes it so I can eat something breaded on occasion. I seasoned the crumbs and dipped the chicken in egg whites to make it stick.

Side dish: Cucumber tomato salad (1 tablespoon of light ranch or olive garden light italian dressing)

Dipping sauce: 2 tablespoons of Bolthouse Farms honey mustard dressing. YUMMY!
