This is a definite cold weather GO TO!
For this recipe, I go for the easiest shortcuts and I let my pressure cooker do the work! I have an older Wolfgang Puck pressure cooker/steamer. I have had that thing for at least 15 years and I still use it all the time… Talk about a good investment!
I add one can of organic tomato paste, about two to three cups of water, three bags of frozen vegetable soups veggies (I get them at Kroger and I usually buy them on sale -they do a $10 for $10 sale pretty often on frozen vegetables. It is the best time to stock up on these and things like frozen pearl onions). I also add about 10-12 frozen pearl onions, two packets of Beef Herb OX (this is basically organic no sodium beef bouillon seasoning) You can find it at Wal-mart or any health food store.
I also chop up about four whole tomatoes on the vine and I add additional frozen cut green beans (canned will also do in a pinch). I then cook some ground organic bison meat (always in my freezer) or lean hamburger meat. I use the Mrs’ Dash Steak seasoning, Morton’s Light Salt and cracked black pepper to season.
Drain your meat well, and add it to the cooker. Let it all cook for about two to three hours or until all veggies are nice and tender. Once it is done, be very careful when you take it out because it is VERY hot. If you are not watching your carbs, I LOVE to add Parmesan crustini to the bowl and pour the soup on top of them. I don’t usually add the crustini unless it is a special occasion. 🙂
This really hits the spot on cold nights and when you want something that you can eat on for days… You can eat a small bowl with a salad the next day for lunch too! It is even better the next day… ENJOY!
